    4 baked potatoes, quartered
    ½ c. Hy-Vee sour cream
    1 (9 oz) package Hy-Vee vegetable soup mix
    1 c. Hy-Vee shredded cheddar cheese
    ½ c. diced yellow onion
    ½ c. diced sweet red pepper
    ⅓ c. Hy-Vee bacon bits

    Directions

    1. Scoop potato out of skins. Mash slightly.
    2. In a large mixing bowl, combined scooped-out potato, sour cream, soup mix, cheese, onion and red pepper. Mix well.
    3. Place skins on a greased baking sheet and fill with mixture.
    4. Top with bacon bits.
    5. Bake at 375 degrees for 15 minutes or until cheese is melted.
