Vegetable Potato Skins

4 baked potatoes, quartered | ||
½ c. Hy-Vee sour cream | ||
1 (9 oz) package Hy-Vee vegetable soup mix | ||
1 c. Hy-Vee shredded cheddar cheese | ||
½ c. diced yellow onion | ||
½ c. diced sweet red pepper | ||
⅓ c. Hy-Vee bacon bits |
Directions
- Scoop potato out of skins. Mash slightly.
- In a large mixing bowl, combined scooped-out potato, sour cream, soup mix, cheese, onion and red pepper. Mix well.
- Place skins on a greased baking sheet and fill with mixture.
- Top with bacon bits.
- Bake at 375 degrees for 15 minutes or until cheese is melted.
