Vegetarian Wheat Berries Strawberry Salad

⅓ c. uncooked sorghum | ||

⅓ c. uncooked wheat berries | ||
¼ tsp. Hy-Vee salt | ||
6 c. mixed salad greens | ||
1 ½ c. sliced strawberries | ||
1 c. crumbled blue cheese (4 oz) | ||
1 c. chopped Hy-Vee English walnuts, toasted | ||
Balsamic dressing, optional |
Directions
- Rinse sorghum; place in a large saucepan. Add water, wheat berries and salt. Bring to boiling; reduce heat. Simmer, covered, for 50 to 60 minutes or until grains are tender. Drain any remaining liquid; set aside.
- Line four dinner plates with salad greens. Top with prepared grains, strawberries, blue cheese and walnuts. Drizzle with balsamic dressing, if desired.
