Directions
For eggs: Whisk together eggs, minced chives, salt, and pepper in small bowl. Pour egg mixture into 10-inch nonstick skillet and cook 2 to 3 minutes until soft set. Eggs will continue to cook in the waffle maker; remove from heat.
For waffle sandwich: Separate biscuits into 8. Gently press each round into a 4-inch circle. Top 4 rounds with cheese, 2 slices cooked bacon, and scrambled eggs, leaving a ½-inch border around the edge. Top with remaining 4 biscuit rounds. Press edges to seal.
Place 1 stuffed biscuit in center of waffle maker; close the lid and bake for 6 minutes or until biscuit is thoroughly cooked and golden brown. Repeat with remaining biscuits, spraying waffle maker with cooking spray before cooking each biscuit.
