Warm Sweet Potato Salad

4 large baking potatoes, peeled and diced | ||
6 large sweet potatoes, peeled and diced | ||
½ c. mayonnaise | ||
¼ c. Dijon mustard | ||
⅓ c. white balsamic vinegar | ||
1 tsp. ground turmeric | ||
1 tbsp. chopped chives | ||
salt and ground black pepper, to taste | ||
2 tbsp. honey | ||
2 green onions, finely chopped | ||
1 red onion, finely chopped |
Directions
- Place the diced baking and sweet potatoes in a Dutch oven; cover with water and bring to a boil. Boil until the potatoes are fork-tender, but not mushy, about 20 minutes. Drain and cool the cooked potatoes slightly.
- Meanwhile, mix together the mayonnaise, mustard, balsamic vinegar, turmeric, chives, honey, salt and pepper in a large bowl. Add the green onions, red onion and cooked potatoes and toss to coat. Serve garnished with extra chives or green onion.
