    4 c. fresh broccoli florets
    ½ c. chopped onion
    1 (32 oz) container Hy-Vee chicken broth
    2 (10.75 oz each) cans Hy-Vee cream of mushroom soup
    2 c. Hy-Vee skim milk
    ¼ c. Hy-Vee cornstarch
    ½ c. cold water
    1 c. Hy-Vee shredded cheddar cheese
    Hy-Vee salt and Hy-Vee pepper to taste

    Directions

    1. In a large saucepan, combine broccoli, onion and broth. Cook over high heat for 10 minutes until broccoli is tender.
    2. Meanwhile in a medium bowl, stir together soup and milk until smooth. Stir into broccoli mixture.
    3. In a small bowl, stir together cornstarch and water until smooth. Stir into broccoli mixture.
    4. Bring mixture back to a boil, stirring frequently. Stir in cheese, salt and pepper before serving.
