Warm-Up Broccoli Soup

4 c. fresh broccoli florets | ||
½ c. chopped onion | ||
1 (32 oz) container Hy-Vee chicken broth | ||
2 (10.75 oz each) cans Hy-Vee cream of mushroom soup | ||
2 c. Hy-Vee skim milk | ||
¼ c. Hy-Vee cornstarch | ||
½ c. cold water | ||
1 c. Hy-Vee shredded cheddar cheese | ||
Hy-Vee salt and Hy-Vee pepper to taste |
Directions
- In a large saucepan, combine broccoli, onion and broth. Cook over high heat for 10 minutes until broccoli is tender.
- Meanwhile in a medium bowl, stir together soup and milk until smooth. Stir into broccoli mixture.
- In a small bowl, stir together cornstarch and water until smooth. Stir into broccoli mixture.
- Bring mixture back to a boil, stirring frequently. Stir in cheese, salt and pepper before serving.
