Whipped Roasted Sweet Potatoes

6 large sweet potatoes | ||
⅓ c. Hy-Vee honey | ||
⅓ c. Hy-Vee packed brown sugar | ||
½ tsp. Hy-Vee salt | ||
1 tsp. allspice | ||
1 tbsp. lemon juice | ||
¼ c. Hy-Vee margarine |
Directions
- Preheat oven to 400 degrees.
- Place potatoes in a single layer on a greased baking sheet.
- Bake for 55 minutes. Cool slightly.
- Cut potatoes in half. Scoop out pulp into a large mixing bowl. Discard skins.
- Add honey, brown sugar, salt, allspice, lemon juice and margarine to sweet potatoes.
- Whip with an electric mixer until smooth. Serve hot.
