- Hy-Vee nonstick cooking spray
Directions
Using a food processor or blender, blend thawed butternut squash until smooth. Add mixture to another medium bowl. Whisk in egg, buttermilk, and vanilla. Pour into flour mixture and stir until just combined.
Spray preheated waffle iron with nonstick spray. Add about 1/3 cup waffle batter to hot waffle iron. Cook according to manufacturer's instructions. Remove waffle from iron and repeat with remaining batter.
If desired, top hot waffles with Greek yogurt, honey, cinnamon, nutmeg, and/or fresh or frozen fruit.
