3 Italian turkey sausage (12 oz total) | ||
1 small yellow summer squash, quartered lengthwise and cut into 1-inch-long pieces | ||
1 small zucchini, quartered lengthwise and cut into 1-inch-long pieces | ||
1 medium red pepper, seeded and julienned and cut into 1-inch-long pieces | ||
¼ c. Hy-Vee zesty Italian dressing, divided | ||
cooked Hy-Vee linguine, optional |
Directions
- In a large skillet, cook sausage links according to package directions. Remove from heat and slice in half lengthwise; cut into 1-inch-long pieces.
- Return cooked sausage to skillet and add squash, zucchini, red pepper and 2 tablespoons Italian dressing. Cook over medium-high heat for 6 to 8 minutes or until vegetables are almost tender, stirring occasionally.
- Serve with remaining dressing drizzled over top. Serve over cooked linguine pasta, if desired.
