3 large eggs, beaten | ||
1 c. vegetable oil | ||
1 c. granulated sugar | ||
3 tsp. vanilla | ||
2 c. shredded zucchini | ||
3 c. flour | ||
1 tsp. baking soda | ||
¼ tsp. baking powder | ||
3 tsp. cinnamon | ||
¾ tsp. nutmeg | ||
1 c. chopped nuts, optional | ||
½ c. raisins, optional |
Directions
- Preheat oven to 350 degrees. Grease two 9-by-5-inch loaf pans.
- Beat together eggs, vegetable oil, sugar and vanilla. Fold in zucchini.
- Sift together flour, baking soda, baking powder, cinnamon and nutmeg.
- Fold in zucchini mixture, nuts and raising. Divide between prepared pans.
- Bake 1 hour or until wooden pick inserted in center comes out clean. Remove from pans; cool.
