1 lbs. ground beef, browned and drained | ||
1 (10.5 oz) can cream of chicken soup | ||
1 c. sour cream | ||
1 c. grated carrots | ||
¼ c. margarine, melted, divided | ||
1 (6 oz) pkg stuffing mix, divided | ||
salt and pepper, to taste |
Directions
- In medium saucepan, boil zucchini and 1/4 cup onion in water until tender. Drain.
- Combine with ground beef, soup, sour cream, carrots, remaining 1/4 cup chopped onion, salt and pepper.
- Evenly pour half of margarine in the bottom of a 9-by-13-inch baking dish. Spread half of stuffing mix over margarine. Pour meat/soup mixture over stuffing. Top with remaining stuffing mix. Pour remaining margarine on top.
- Bake at 350 degrees for 35 minutes.
