Cooling the milk to 115 degrees helps the live probiotic cultures in the Greek yogurt to activate, creating cultured and tangy homemade yogurt.In a separate medium bowl, mix 1/4 cup of vanilla Greek yogurt and 2 tablespoons of vanilla extract. Add 1 cup of the scalded milk to the bowl and whisk to combine. Add mixture back to the stainless steel bowl and place in the Instant Pot. Press the "Yogurt" setting and adjust the time to 10 hours.
Once your Instant Pot beeps and displays "yogt," your yogurt is done. The yogurt will look semi-solid, but don't worry. It will become smooth in the next step.
Use a whisk to stir the yogurt and incorporate all of the ingredients that may have settled or separated during the cooking process.
Strain the yogurt through a fine-mesh strainer and transfer to clean glass containers with fitted lids. Chill for at least 6 hours before serving. The yogurt will be thinner than Greek yogurt, but it's ideal for making overnight oats or mixing with fruit.
