    ⅔ c. Hy-Vee plain panko bread crumbs
    ⅓ c. chopped yellow onion
    1 Hy-Vee large egg, beaten
    1 tbsp. chopped Italian parsley
    2 tsp. Hy-Vee Worcestershire sauce
    1 tsp. kosher salt
    1 tsp. minced garlic
    1 tsp. chopped fresh thyme
    ½ tsp. Hy-Vee black pepper
    10 slice(s) Wahlburgers hickory smoked uncured sliced bacon
    Mushroom Gravy
    2 c. sliced white mushrooms
    ¼ c. chopped white onion
    1 tbsp. minced garlic
    1 c. dry white wine
    2 c. Hy-Vee 50% less sodium beef broth
    1 tsp. Hy-Vee Dijon mustard
    2 c. Hy-Vee heavy whipping cream
    Hy-Vee salt, to taste
    Hy-Vee black pepper, to taste

    Directions

    1. For meatloaf, preheat oven to 375 degrees. Spray a 13x9-in. baking pan with cooking spray.

    2. Combine meat blend, bread crumbs, onion, egg, parsley, Worcestershire sauce, salt, garlic, thyme and pepper in a large bowl; do not overmix. Shape meat mixture into a 9-in.-long loaf in prepared pan.

    3. Arrange bacon strips crosswise on top of meatloaf, overlapping slightly. Tuck ends of bacon strips under meatloaf to secure. Bake at 375 degrees for 55 to 60 minutes or until the meatloaf reaches 165 degrees.

    4. For gravy, carefully remove meatloaf from baking pan using 2 metal spatulas; place on serving platter and loosely cover with foil. Let meatloaf stand for 10 to 15 minutes before serving.

    5. Meanwhile, scrape pan drippings into a large nonstick skillet. Heat over medium heat. Add mushrooms, onion and garlic. Reduce heat to low. Cook 2 to 3 minutes or until mushrooms soften, stirring often.

    6. Remove skillet from heat; add wine. Return to heat; simmer over medium heat for 5 minutes, stirring often. Stir in beef broth and mustard; simmer for 5 minutes or until reduced by half. Stir in cream; simmer for 5 to 6 minutes or until desired consistency. Season to taste with salt and pepper. Serve with meatloaf.
