Cayenne-Spiced Tuna Salad

1 tsp. grated fresh ginger root | ||
¼ tsp. cayenne | ||
3 tbsp. finely chopped onion | ||
¼ c. Hy-Vee light mayonnaise | ||
½ tsp. fresh lemon juice | ||
4 c. Hy-Vee spring salad mix, divided |
Directions
- With a fork, flake tuna into small bowl. Stir in remaining ingredients except spring mix.
- Refrigerate until ready to serve. To serve, divide spring mix between two serving plates. Top each with half the tuna mixture.
