    2 tsp. olive oil
    1 ½ lbs. boneless, skinless chicken breast halves
    1 ½ tbsp. Mrs. Dash classic Italiano seasoning blend
    ¾ c. chopped green bell pepper
    ¾ c. sliced fresh mushrooms
    1 (14.5 oz) can pasta-ready tomatoes, undrained
    2 tbsp. chopped fresh parsley
    ½ c. shredded Mozzarella cheese

    Directions

    1. Heat olive oil in a large skillet over medium-high heat.
    2. Add chicken and brown.
    3. Add Mrs. Dash seasoning, bell pepper, mushrooms, tomatoes and parsley.
    4. Simmer, uncovered, for 10 to 12 minutes or until chicken is done.
    5. Sprinkle with cheese and serve immediately.
