Directions
Heat 3 tablespoons olive oil in a large skillet over medium heat. Place chicken in skillet, skin side down. Sear for 4 to 6 minutes or until lightly golden, turning halfway through. Transfer chicken to a plate; set aside.
Add remaining 3 tablespoons oil to skillet; heat over medium-high heat. Add onion, olives and garlic to skillet. Cook for 4 to 5 minutes or until onion begins to caramelize. Stir in mushrooms; return chicken to skillet. Remove skillet from heat.
Add thyme, rosemary and enough red wine to just cover the chicken. Return skillet to heat. Simmer, uncovered, for 5 minutes or until liquid is reduced by about half.
Pour pasta sauce around chicken. Cover and cook over medium heat for 25 to 30 minutes or until sauce is slightly thickened and chicken reaches 165 degrees to 170 degrees. Remove and discard thyme and rosemary sprigs before serving.
