Directions
Stir together whipped topping, 2 Tbsp. caramel sauce and ¼ tsp. apple pie spice in a small bowl until combined; set aside.
Combine frozen apple cider cubes, cold brew coffee, xanthan gum and remaining 2 Tbsp. caramel sauce and ½ tsp. apple pie spice in a large blender. Cover and process on high until smooth.
Remove prepared glasses from freezer; pour coffee mixture into glasses. Top with whipped topping mixture. Garnish with additional caramel sauce and apple pie spice, if desired.
