Crispy Bacon Cups with Maple-Pear Filling

1 (12 oz) pkg uncured bacon | ||
1 pear, cored and chopped | ||
¼ c. Hy-Vee Select pure maple syrup | ||
⅓ c. Gorgonzola cheese crumbles |
Directions
- Preheat oven to 350 degrees. Line a baking sheet with double layer of paper towels. Place a cooling rack on top. Set aside. Spray cups of a mini muffin pan with cooking spray.
- Cut bacon strips crosswise into thirds. Place two pieces bacon crosswise into each muffin cup. Bake for 30 minutes or until bacon is crisp. Remove bacon from cups and place on cooling rack, using paper towels to absorb bacon drippings.
- In a small bowl, gently stir together pear, maple syrup and cheese crumbles. Return bacon to muffin cups and fill each with 1 teaspoon pear mixture. Bake for 5 minutes. Transfer to a serving platter. Serve immediately.
