Flax Banana Bread

1 ¾ c. all-purpose flour | ||
¾ c. milled flaxseed* | ||
¾ c. sugar | ||
1 tsp. baking powder | ||
½ tsp. baking soda | ||
½ tsp. salt | ||
2 eggs | ||
⅓ c. canola oil | ||
1 c. mashed bananas (2 or 3 ripe bananas) | ||
½ c. chopped walnuts | ||
¼ c. brown sugar | ||
½ tsp. cinnamon |
Directions
- Mix together flour, milled flaxseed, sugar, baking powder, baking soda and salt in a bowl.
- In a separate bowl, beat together eggs and oil.
- Add dry ingredients and mashed bananas alternately to egg/oil mixture, stirring until dry ingredients are moistened.
- Pour into a greased 8.5-by-4.5-inch loaf pan.
- Combine chopped nuts, brown sugar and cinnamon. Sprinkle over batter in loaf pan. Pat topping down gently into batter.
- Bake at 350 degrees for 55 to 60 minutes.
- *Either used purchased milled flaxseed or grind whole flaxseed in a coffee grinder to a granular, free-flowing meal.
