1 (14-oz.) pkg. Hy-Vee frozen homestyle meatballs, thawed
2 medium yellow onions, halved and thinly sliced (4 cups)
2 tbsp. Hy-Vee all-purpose flour
2 c. Hy-Vee no salt added beef flavored broth
¾ c. Hy-Vee shredded Swiss cheese
1 (8.2-oz.) pkg. Idahoan Baby Reds instant mashed potatoes, for serving
1 (10.8 oz.) pkg. Hy-Vee frozen fresh steam petite whole green beans
Fresh thyme, for garnish

Directions

  1. Melt 1 Tbsp. butter in a 12-in. nonstick skillet over medium heat. Add meatballs; cook for 3 to 5 minutes or until meatballs are golden and reach 165 degrees. Transfer to a tray; loosely cover with foil to keep warm.

  2. Add remaining 3 Tbsp. butter to skillet; melt over medium-low to medium heat. Add onions. Cook, uncovered, for 30 to 35 minutes or until onions are lightly brown and begin to caramelize, stirring occasionally.

  3. Sprinkle flour over onions; stir to coat. Cook and stir for 1 minute or until flour is combined. Slowly pour broth into the skillet. Cook, uncovered, for 8 to 10 minutes or until slightly thickened, stirring occasionally.

  4. Return meatballs to skillet with onion mixture; sprinkle with cheese. Cover and simmer for 3 to 5 minutes or until cheese is melted.

  5. Meanwhile, prepare mashed potatoes and green beans according to pkg. directions.

  6. To serve, top mashed potatoes with meatballs. Serve with green beans. Garnish with fresh thyme, if desired.
