1 (10 oz) can Hy-Vee premium breast of chicken, drained and chunked | ||
½ c. shredded carrots | ||
1 (8 oz) can pineapple tidbits, drained | ||
1 c. sliced red grapes | ||
1 medium Braeburn apple, cored, seeded and diced | ||
½ c. Hy-Vee sliced almonds | ||
½ c. light mayonnaise | ||
¼ c. Hy-Vee lemon yogurt | ||
Lettuce leaves, optional |
Directions
- In a medium mixing bowl, combine chicken, carrots, pineapple, grapes, apple and almonds. Stir to blend.
- In a small bowl, mix together mayonnaise and lemon yogurt.
- Stir mayonnaise mixture into chicken mixture. Toss gently to coat. Refrigerate at least 2 to 3 hours before serving.
- Serve over lettuce leaves, if desired.
