Gluten-Free Quinoa Pizza Bites

1 c. uncooked quinoa | ||
2 c. water | ||
2 large eggs | ||
1 c. chopped onion | ||
1 c. shredded mozzarella cheese | ||
2 tsp. minced garlic | ||
½ c. chopped fresh basil (or 2 tbsp dried) | ||
½ c. diced cherry tomatoes | ||
½ tsp. salt | ||
1 tsp. paprika | ||
1 tsp. dried oregano | ||
Pizza sauce, for dipping |
Directions
- Place the quinoa and water in a covered pot. Bring to boil, then simmer for 20 minutes or until quinoa is tender.
- Preheat oven to 350 degrees.
- Mix together cooked quinoa, eggs, onion, cheese, garlic, basil, tomatoes, salt, paprika and oregano in a medium mixing bowl. Divide between cups in a greased mini muffin tin. Fill each cup to the top (1 heaping tablespoon each) and press down gently to compact.
- Bake for 15 to 20 minutes. Cool for 10 minutes before removing from the pan. Serve warm with sauce for dipping.
