1 ½ cups Hy-Vee margarine, divided | ||
3 ½ tbsp. plus 3 1/2 tsp Hy-Vee cocoa, divided | ||
2 c. Hy-Vee sugar | ||
4 Hy-Vee large eggs | ||
1 ½ c. Hy-Vee flour | ||
2 tsp. Hy-Vee pure vanilla extract, divided | ||
1 ½ c. Hy-Vee flake coconut | ||
1 ½ c. chopped nuts, optional | ||
1 (7 ounce) jar marshmallow creme | ||
⅓ c. Hy-Vee skim milk | ||
4 c. cups Hy-Vee powdered sugar |
Directions
- Preheat oven to 350 degrees. Grease 9-by-13-inch pan; set aside.
- Melt 1 cup margarine in small saucepan. Remove from heat and add 3-1/2 tablespoons cocoa and sugar, mixing well. Pour into large mixing bowl and stir in eggs.
- Add flour, 1 teaspoon vanilla, coconut and chopped nuts (if desired), mixing until smooth.
- Spread mixture into prepared pan. Bake for 30 to 35 minutes or until tests done witha toothpick.
- Immediately spread with marshmallow creme. Let cool completely before frosting.
- For frosting, place 1/2 cup margarine, 3-1/2 teaspoons cocoa and milk in a saucepan. Bring to a boil and boil 1 minute. Remove from heat. Add powdered sugar and 1 teaspoon vanilla. Beat with electric mixer until smooth. Frost cooled bars.
