North African Shrimp Scampi

1 lbs. shrimp, peeled and deveined | ||
3 tsp. Ras El Hanout | ||
kosher salt and freshly ground pepper, to taste | ||
3 tbsp. extra-virgin olive oil | ||
3 to 4 cloves garlic, minced | ||
1 preserved lemon, peel only, rinsed and chopped | ||
2 to 3 tsp harissa paste or a pinch of crushed red pepper flakes | ||
3 tbsp. lemon juice | ||
2 tbsp. chopped cilantro | ||
2 tbsp. chopped Italian parsley |
Directions
- Season shrimp with Ras El Hanout, salt and pepper on both sides.
- Heat oil in a large saute pan over medium high heat. Add garlic, preserved lemon and harissa. Saute for one minute or until fragrant.
- Add shrimp and saute approximately 3 minutes per side or until just pink and just beginning to curl into a tight "C" shape.
- Add lemon juice, cilantro and parsley. Toss to coat and serve immediately.
