    This easy skillet supper combines Italian sausage, colorful bell peppers and flavorful sweet onions for a fast feast that’s ready in 30 minutes.

    2 lbs. Hy-Vee mild Italian pork sausage links
    3 tbsp. Gustare Vita extra virgin olive oil, divided
    2 medium red bell peppers, seeded and cut into strips
    2 medium yellow bell peppers, seeded and cut into strips
    2 medium white onions, peeled and thinly sliced
    1 tsp. minced garlic
    1 tbsp. Gustare Vita red wine vinegar
    ¼ tsp. Hy-Vee crushed red pepper
    1 tsp. chopped Italian parsley
    Hy-Vee salt , to taste
    Hy-Vee black pepper, to taste

    Directions

    1. Place sausage links in a large skillet. Add 1½ cups water to skillet. Cover and bring to a simmer over medium-high heat. Reduce heat and simmer for 7 to 8 minutes or until internal temperature reaches 165 degrees. Remove from heat. Let stand, covered, about 10 minutes.

    2. Meanwhile, heat 2 Tbsp. olive oil in another large skillet over medium-high heat. Add the red pepper,s yellow peppers and onions. Cook for 6 to 8 minutes until lightly browned, stirring often. Add garlic; cook for 2 minutes, stirring often. Stir in vinegar; cook for 1 minute. Remove from skillet; set aside.

    3. Heat remaining 1 Tbsp. olive oil in same skillet over medium-high heat. Drain sausages; return to skillet. Cook for 6 to 8 minutes or until browned on all sides, turning often. Add bell pepper mixture and crushed red pepper to skillet; cook and stir for 1 minute.

    4. To serve, arrange sausages and peppers on a serving platter. Sprinkle with parsley. Season to taste with salt and pepper.
