Directions
Meanwhile, heat 2 Tbsp. olive oil in another large skillet over medium-high heat. Add the red pepper,s yellow peppers and onions. Cook for 6 to 8 minutes until lightly browned, stirring often. Add garlic; cook for 2 minutes, stirring often. Stir in vinegar; cook for 1 minute. Remove from skillet; set aside.
Heat remaining 1 Tbsp. olive oil in same skillet over medium-high heat. Drain sausages; return to skillet. Cook for 6 to 8 minutes or until browned on all sides, turning often. Add bell pepper mixture and crushed red pepper to skillet; cook and stir for 1 minute.
To serve, arrange sausages and peppers on a serving platter. Sprinkle with parsley. Season to taste with salt and pepper.
