½ (32 oz) pkg That's Smart elbow macaroni, uncooked (about 4 c.) | ||
2 c. light mayonnaise | ||
¾ c. Hy-Vee light Italian salad dressing | ||
Hy-Vee salt and Hy-Vee pepper, to taste | ||
1 (10 oz) pkg shredded lettuce | ||
1 c. diced red onion | ||
12 slice(s) Hy-Vee bacon, cooked, crumbled | ||
1 (15 oz) can Hy-Vee light red kidney beans, drained, rinsed | ||
1 (15 oz) can Hy-Vee dark red kidney beans, drained, rinsed | ||
1 (15 oz) can Hy-Vee black beans, drained, rinsed | ||
1 (8 oz) pkg Hy-Vee finely shredded cheddar cheese |
Directions
- Cook pasta according to package directions; drain. Rinse with cold water to cool quickly; drain well.
- In medium bowl, stir together mayonnaise and salad dressing. Season with salt and pepper. Toss half the dressing with pasta.
- Place half the pasta in a large clear bowl. Top with half the lettuce, onion, bacon and beans. Spread half the remaining dressing over the beans and sprinkle with half the cheese. Repeat layers.
- Cover; refrigerate two hours.
