Description
For true south-of-the-border flavor, use a ripe avocado - one that gives a little when squeezed. Take a pass if the fruit is firm.

1 medium avocado, peeled and diced | ||
1 small jalapeno, seeded and diced | ||
½ c. diced white onion | ||
¾ c. minced cilantro | ||
2 garlic cloves, chopped | ||
Juice of a lime | ||
½ tsp. Hy-Vee salt | ||
Crumbled feta cheese, for garnish |
Directions
- In a food processor, combine tomatillos, avocado, jalapeno, onion, cilantro, garlic, lime juice and salt. Blend until combined. Spoon into a bowl and sprinkle with crumbled feta cheese.
