Description
We challenged ourselves to hit the Test Kitchen and prep meals for the week—breakfasts, lunches, dinners—with just 20 ingredients.
Using Hy-Vee Short Cuts, the pre-cut fruits and vegetables in the produce department, we skipped the rinsing, spiralizing, chopping, and dishwashing, and just focused on quickly making healthy meals for the days ahead. These 7 recipes are what we loved the most. And remember, you can save even more time by ordering groceries online.
Baked Oatmeal Muffins
All you need: 6 ingredients. These tasty honey, cinnamon, and berry muffins are freezer-friendly and can be wrapped and frozen for up to 1 month.
Baked Egg Muffins
In less than 30 minutes, you'll have breakfast for the week. These freezer-friendly egg muffins are loaded with veggies and protein to get you through busy mornings.
Honey-Balsamic Chicken and Roasted Potatoes
Sweet honey and sour balsamic vinegar pair beautifully with fresh berries. Use Hy-Vee Short Cuts elegant berry blend (a blend of blueberries, blackberries, and raspberries) if you don't want to buy multiple berry packs.
Mediterranean Quinoa Bowl
This chilled honey and balsamic vinegar quinoa salad is a quick mix-and-chill recipe. And, if you don't feel like hard boiling those eggs yourself, we've got Hy-Vee Short Cuts boiled eggs for you, too.
Veggie Noodle Shrimp Scampi
Who doesn't love shrimp scampi? We've come up with our own favorite, and healthier, version using Hy-Vee Short Cuts zucchini noodles, lemon, shrimp, and feta cheese.
Shrimp 'N' Cauliflower-Broccoli "Grits"
In just 15 minutes you can make this healthy take on shrimp and grits by using riced cauliflower and broccoli. Yes, that's a thing.
Shredded Chicken over Mashed Veggies
This turned out to be one of our favorites. Plus, we shaved at least 15 minutes off the prep time by using Hy-Vee Short Cuts chopped yellow onions and riced cauliflower and broccoli.
