1 lbs. fresh asparagus, trimmed & cut into 2-inch pieces | ||
1 medium red bell pepper, julienned | ||
1 medium yellow bell pepper, julienned | ||
1 c. sliced fresh mushrooms | ||
¼ c. diced onion | ||
2 tbsp. lemon juice | ||
⅔ tsp. garlic salt | ||
12 (8-inch) Hy-Vee flour tortillas, warmed |
Directions
- In a large nonstick skillet over medium heat, combine chicken, olive oil, asparagus, red pepper, yellow pepper, mushrooms and onion.
- Cook and stir until vegetables are crisp-tender - about 8 to 10 minutes.
- Stir in lemon juice and garlic salt.
- Spoon 1/2 cup of vegetable/meat mixture on each tortilla. Fold in sides.
