1 (19 oz) pkg Hy-Vee Select cheese tortellini | ||
½ c. Hy-Vee light mayonnaise | ||
¼ c. light Parmesan peppercorn ranch dressing | ||
½ (10 oz) box Hy-Vee frozen chopped spinach, thawed and well-drained | ||
2 tbsp. diced pimientos | ||
2 tbsp. Hy-Vee breadcrumbs | ||
2 tbsp. Hy-Vee shredded Parmesan cheese |
Directions
- Prepare tortellini according to package directions. Drain well. Return to pot.
- Stir in mayonnaise, Parmesan ranch dressing, spinach and pimientos. Transfer to a lightly greased 2-quart casserole dish.
- Toss together breadcrumbs and Parmesan cheese. Sprinkle on top of tortellini mixture.
- Bake, uncovered, at 350 degrees for 15 minutes or until golden brown.
