1 (8 oz) can Hy-Vee corn, drained and rinsed | ||
1 (8 oz) can Hy-Vee peas, drained and rinsed | ||
1 (15 oz) can Hy-Vee black beans, drained and rinsed | ||
½ c. chopped onion | ||
½ c. chopped red bell pepper | ||
½ c. chopped green bell pepper | ||
2 tbsp. Hy-Vee Select olive oil | ||
¼ c. Hy-Vee Select red wine vinegar | ||
½ tsp. Hy-Vee salt | ||
½ tsp. Hy-Vee black pepper | ||
Hy-Vee multi-grain tortilla chips, optional |
Directions
- In a medium serving bowl stir together corn, peas, black beans, onion, red bell pepper and green bell pepper.
- In a small bowl, combine olive oil, vinegar, salt and black pepper. Stir into black bean mixture to coat.
- Cover and refrigerate until serving time. Serve with tortilla chips, if desired.
