Cheesy Brussels Sprouts Dip

2 tbsp. Hy-Vee Select extra-virgin olive oil, divided | ||
2 ½ c. coarsely chopped Brussels sprouts | ||

½ c. Hy-Vee light sour cream | ||
4 oz. Hy-Vee light cream cheese | ||
1 c. Hy-Vee shredded mozzarella cheese | ||
¼ c. Hy-Vee shredded Parmesan cheese |
Directions
- Preheat oven to 375 degrees.
- Saute shallot and garlic in 1 tablespoon olive oil in a cast-iron skillet over medium heat. Add Brussels sprouts, salt and pepper; saute for 3 more minutes.
- In a separate bowl, combine sour cream, cream cheese, mozzarella cheese and Parmesan cheese. Add to Brussels sprouts and stir to combine.
- Stir in remaining tablespoon olive oil to the pan and bake for 12 minutes or until bubbly.
