Directions
Arrange bacon, in a single layer, in prepared baking pan; bake for 16 to 18 minutes or until is crisp. Cool bacon slightly; chop and set aside.
Whisk together eggs and ricotta cheese in a medium bowl. Stir in 1 cup Cheddar cheese and 1/2 cup green onions.
Pour egg mixture into prepared baking dish. Add half of the waffle pieces; gently stir to coat. Top with remaining waffle pieces, chopped chicken bites, bacon and 2 Tbsp. syrup. Cover with foil; refrigerate for 2 hours or overnight.
Preheat oven to 450 degrees. Remove foil from baking dish. Drizzle with 1/2 cup gravy. Sprinkle with remaining 1/2 cup Cheddar cheese. Bake, uncovered, for 25 to 30 minutes or until internal temperature reaches 165 degrees. Drizzle with remaining 1/2 cup gravy. Garnish with hot honey and additional syrup and additional green onions, if desired.
