Chicken Salad with Grapes and Apples

½ c. plus 2 tbsp light mayonnaise | ||
1 tbsp. Hy-Vee Dijon mustard | ||
¼ tsp. Hy-Vee salt | ||
¼ tsp. Hy-Vee ground black pepper | ||
2 chicken breasts from a rotisserie chicken, bones and skin removed, coarsely shredded (about 2-1/2 cups) | ||
1 c. halved seedless red grapes | ||
1 Braeburn apple, cored and finely chopped | ||
2 green onions, green parts thinly sliced | ||
1 (2 oz) pkg Hy-Vee slivered almonds, toasted* | ||
1 (5 oz) pkg Hy-Vee spring mix salad greens |
Directions
- Combine mayonnaise, mustard, salt and pepper in a large bowl. Fold in chicken, grapes, apple and onions. Cover and chill for 2 hours.
- Before serving, fold almonds into chicken salad.
- Serve chicken salad on beds of salad greens.
- *To toast almonds, toss nuts in a skillet over medium heat until light golden brown.
