Chocolate Milk Gluten-Free Brownies

½ c. stevia (may substitute 1 c. Splenda for 1/2 c. stevia) | ||

1 c. gluten-free flour | ||
1 tsp. baking powder | ||
1 banana | ||
2 tsp. vanilla extract | ||
4 eggs | ||
½ c. unsweetened applesauce | ||
½ c. light vanilla yogurt |
Directions
- Preheat oven to 350 degrees. Coat an 11-by-15-inch baking sheet with non-stick spray.
- In a small saucepan, bring water to a boil; add cocoa and stir until cocoa has dissolved. Pour cocoa liquid in a large bowl; allow to cool slightly.
- In a separate bowl, add whey, stevia, salt, flour and baking powder. Mix well.
- In a blender or food processor, purée banana; add to cocoa liquid. Add vanilla, eggs, applesauce and yogurt. Mix thoroughly. Stir in flour mixture.
- Spread mixture evenly in prepared pan. Bake for 20 minutes or until edges begin to pull away from the sides of the pan.
