¼ c. seeded and finely chopped Basket & Bushel mini sweet peppers, plus additional peppers for serving
1 ½ c. Hy-Vee 1% lowfat small curd cottage cheese
½ tsp. Hy-Vee Italian seasoning
½ c. Hy-Vee pizza sauce
¼ c. Hy-Vee shredded pizza cheese
2 tbsp. mini pepperoni slices
2 tbsp. precooked Italian sausage crumbles
Fresh basil, for garnish

Directions

  1. Preheat oven to 400 degrees. Heat oil in a medium nonstick skillet over medium-high heat. Add onions and ¼ cup chopped mini peppers. Cook for 2 to 3 minutes or until softened, stirring frequently. Set aside to cool.

  2. Meanwhile, place cottage cheese in a blender. Cover and blend for 25 to 30 seconds or until smooth. Pour into a medium bowl; stir in Italian seasoning and cooked onion mixture. Pour into 2 (10-oz.) oven-safe ramekins.

  3. Top each cottage cheese mixture with pizza sauce, shredded cheese pepperoni and sausage. Place ramekins in a rimmed baking pan and bake for 14 to 16 minutes or until cheese is melted and edges are bubbly.

  4. Let stand for 10 to 15 minutes before serving. Garnish with basil and serve with additional sweet mini peppers, if desired.
