1 lbs. boneless, skinless chicken breasts, cut into thin strips | ||
1 medium red pepper, seeded and thinly sliced | ||
1 medium onion, thinly sliced | ||
1 tbsp. fajita seasoning | ||
1 tsp. Hy-Vee Select olive oil | ||
1 lime, quartered | ||
1 (10 oz) bag Hy-Vee chopped romaine lettuce | ||
Hy-Vee salsa and/or shredded cheese, optional |
Directions
- In a medium bowl, combine chicken strips, red pepper and onion. Add fajita seasoning and mix well.
- Heat olive oil in a large skillet over medium-high heat. Add chicken mixture and lime sections. Cook for 5 to 7 minutes or until chicken is cooked through.
- Serve fajita mixture over lettuce. Top with salsa and/or cheese if desired.
