8 oz. dry linguini pasta | ||
2 tbsp. chili-flavored olive oil | ||
3 c. quartered organic cherry tomatoes | ||
2 tbsp. minced garlic | ||
1 tsp. Italian seasoning | ||
3 tbsp. chopped fresh basil | ||
3 tbsp. chopped fresh parsley | ||
salt and pepper, to taste | ||
¼ c. grated Parmesan cheese |
Directions
- Prepare linguini according to package directions. Drain.
- In a medium skillet, heat oil. Add tomatoes and garlic, cook 4 minutes. Stir in Italian seasoning, basil, parsley, salt and pepper. Cook an additional 3 minutes.
- To serve, stir together tomato mixture, pasta and cheese.
