Fruited Tuna Salad

1 (6 oz) container low fat vanilla yogurt | ||
1 ½ c. diced cantaloupe | ||
1 c. halved green grapes | ||
1 (11 oz) can Hy-Vee mandarin oranges, drained | ||
2 tbsp. sliced green onion | ||
2 (6 oz each) cans Starkist albacore tuna in water, drained | ||
Hy-Vee salt and Hy-Vee black pepper, to taste | ||
2 c. Hy-Vee garden salad, divided | ||
Hy-Vee sliced almonds, optional |
Directions
- In a medium mixing bowl, stir together yogurt, cantaloupe, grapes, oranges, onion, tuna, salt and pepper.
- To serve, divide garden salad among 4 salad plates. Top each with about 1 cup tuna salad. Top with sliced almonds if desired.
