2 (10 oz each) cans tomatoes with chilies | ||
1 (12 oz) can tomato sauce | ||
⅛ tsp. garlic powder | ||
salt and pepper, to taste | ||
1 c. rice | ||
1 c. shredded cheddar cheese | ||
refried beans, for serving |
Directions
- Brown pork in a large saucepan or Dutch oven. Stir in canned tomatoes, tomato sauce, garlic powder, salt and pepper. Simmer for 1 hour or until meat is tender.
- Meanwhile, prepare rice. Place on a serving plate.
- Top rice with meat sauce. Sprinkle with cheese.
- Serve refried beans as a side dish, if desired.
