    2 c. finely ground tapioca flour
    1 c. packed Hy-Vee light brown sugar
    2 tsp. Chinese five-spice seasoning, plus additional for garnish
    ½ tsp. Hy-Vee baking powder
    ½ Hy-Vee salt
    2 Hy-Vee large eggs, at room temperature
    1 c. Hy-Vee canned coconut milk
    ¾ c. Hy-Vee whole milk, at room temperature
    ½ c. Hy-Vee unsalted butter, melted
    1 tsp. Hy-Vee pure vanilla extract
    1 c. Hy-Vee chopped pecans
    1 ½ c. Hy-Vee pecan halves
    Hy-Vee whipped topping, thawed; for serving
    Hy-Vee Select 100% pure maple syrup, for serving

    Directions

    1. Preheat oven to 350 degrees. Spray a 9-in. pie plate with cooking spray; set aside.

    2. Unroll pie crust dough on a sheet of parchment paper; roll into a 13-in. round. Ease into prepared pie plate. Trim pie dough so 1/2-in. hangs over the edge. Gently prick bottom and sides of pie dough with a fork. Fold pie dough edges under and crimp.

    3. Whisk together tapioca flour, brown sugar, 2 tsp five-spice seasoning, baking powder and salt in a large bowl.  Whisk together eggs, coconut milk, milk, melted butter and vanilla in a medium bowl. 

    4. Add egg mixture to flour mixture; stir until well combined.  Fold in chopped pecans.  Pour mixture into the dough-lined pie plate; arrange pecan halves on top.

    5. Bake for 45 to 50 minutes or until filling is slightly set and top is lightly golden brown.  Remove from oven; cool completely on a wire cooling rack.

    6. To serve, top with Hy-Vee whipped topping. Garnish with additional five-spice seasoning and drizzle with maple syrup, if desired.
