    ½ c. Hy-Vee shredded Parmesan cheese
    ½ c. Hy-Vee breadcrumbs
    ¼ tsp. crushed dried thyme
    salt and pepper, to taste
    2 tbsp. Hy-Vee Dijon-style mustard
    2 tbsp. Hy-Vee Select olive oil
    4 (4 oz each) boneless, skinless chicken breast halves

    Directions

    1. Preheat oven to 375 degrees. Grease ovenproof glass baking dish.
    2. Combine cheese, breadcrumbs, thyme, salt and pepper on one plate. Combine mustard and oil on second plate.
    3. Dip chicken in mustard mixture, then in cheese mixture, shaking off excess. Place chicken in prepared baking dish.
    4. Bake 35 to 40 minutes or until tender and no longer pink. Internal temperature should reach 165 degrees.
