Pecan Apple Bread

½ c. Hy-Vee butter, softened | ||
1 c. Hy-Vee granulated sugar | ||
2 large Hy-Vee eggs | ||
2 c. Hy-Vee flour | ||
1 tsp. Hy-Vee baking soda | ||
1 ½ tsp. apple pie spice | ||
2 medium apples, peeled, cored and chopped | ||
¼ c. Hy-Vee chopped pecans | ||
4 tsp. Hy-Vee powdered sugar | ||
2 tsp. juice from Hy-Vee red maraschino cherries |
Directions
- Preheat oven to 350 degrees.
- In a medium bowl, mix together butter and granulated sugar until creamy.
- Beat in eggs.
- In a separate bowl, stir together flour, baking soda and spice. Mix into butter mixture until moistened.
- Fold in apples and pecans. Pour into a greased 8-by-4-inch loaf pan.
- Bake 55 to 60 minutes or until a toothpick inserted into the center comes out clean. Cool in pan for 15 minutes. Remove from pan and cool completely on a wire rack.
- To serve, stir together powdered sugar and juice. Drizzle over cake top. Slice.
