2 large green bell peppers | ||

6 oz. baby bella mushrooms | ||
2 tbsp. olive oil | ||

Directions
- Slice bell peppers in half lengthwise and remove seeds and ribs.
- Slice onions and mushrooms. Sauté over medium heat with olive oil, minced garlic and black pepper. Sauté until onions and mushrooms are nice and caramelized, about 25 to 30 minutes.
- Preheat oven to 400 degrees.
- Slice roast beef into thin strips and add to onion and mushroom mixture. Allow to cook for 5 minutes.
- Place half slice of cheese on bottom of each pepper. Fill each bell pepper with meat mixture until they are nearly overflowing. Top each pepper with half slice of cheese.
- Bake at 400 degrees for 15 to 20 minutes until cheese on top is golden brown.
