    1 tsp. kosher salt, plus additional for sauce
    ½ tsp. Hy-Vee black pepper, plus additional for sauce
    1 tbsp. Gustare Vita olive oil
    ¼ c. finely chopped yellow onion
    ½ tsp. minced garlic
    1 c. Hy-Vee apple cider
    1 (32-oz.) container Hy-Vee chicken cooking stock
    1 tbsp. Hy-Vee Dijon mustard with white wine
    ½ c. Hy-Vee heavy whipping cream
    ½ tsp. chopped fresh thyme or parsley
    ¼ tsp. Hy-Vee apple cider flavored vinegar

    Directions

    1. Preheat the oven to 350 degrees. Place a wire rack in a rimmed baking sheet; set aside.

    2. If desired, use a sharp knife to carefully trim and scrape away the fat and excess meat from the end of the pork chop bones, leaving clean, exposed bones.

    3. Heat olive oil in a large skillet over medium-high heat. Season pork chops with salt and pepper. Add 2 pork chops to skillet; cook 3 to 4 minutes or until well-browned, turning halfway through. Place on rack in prepared pan. Repeat to brown remaining 2 pork chops; set aside.

    4. Add onion and garlic to pan drippings in skillet. Cook over low heat for 1 minute, stirring frequently. Add the apple cider. Bring to a boil over medium-high heat. Reduce heat to medium-low; simmer for 5 to 10 minutes or until apple cider has evaporated.

    5. Add the chicken stock and mustard to skillet; bring to a boil. Reduce heat and simmer about 10 minutes or until reduced to about 2 cups. Stir in cream and thyme. Simmer 2 to 3 minutes. Stir in vinegar. Season to taste with salt and pepper.

       

      1. Meanwhile, bake pork chops for 7 to 10 minutes or until internal temperature reaches 140 degrees. Let rest about 5 minutes before serving. Stir any pan drippings into sauce. Serve pork chops with sauce.
