Directions
In a large bowl whisk together flour, sugar, cinnamon, baking powder, baking soda, and salt. Make a well in the flour. Add canola oil, pumpkin, eggs, and 2 teaspoons vanilla extract. Stir until just combined; do not overmix.
Divide batter between prepared loaf pans. Bake 45 to 50 minutes or until a toothpick inserted near center comes out clean. Cool 10 minutes in loaf pans; remove bread from pans. Cool completely on a wire cooling rack.
Meanwhile, make cream cheese frosting: Place cream cheese and remaining 1 teaspoon vanilla in a medium bowl. Beat with an electric mixer on medium until light and fluffy. Gradually beat in powdered sugar until well combined. Spread frosting on cooled loaves. If desired, sprinkle with toasted walnuts.
