¼ c. potato starch flour, such as EnerG, or potato flour | ||
1 c. sweet rice flour, such as EnerG, plus additional as needed | ||
2 tsp. xanthan gum | ||
½ tsp. salt | ||
½ c. margarine, such as Smart Balance, at room temperature | ||
½ c. butter-flavor Crisco shortening | ||
2 eggs, cold | ||
1 tbsp. gluten-free apple cider vinegar, such as Heinz | ||
4 tbsp. cold ice water |
Directions
- Combine all ingredients. Add additional rice flour if sticky. Chill for 15 to 20 minutes before rolling.
- Note: Tapioca starch is the same as tapioca flour. Potato starch is not the same as potato flour.
