Bring 2 cups water and 1 c. raw cashews to a boil over high heat in a medium saucepan. Remove pan from heat and let cashews soak for 30 minutes.

We were shocked to find blending soaked cashews with water makes a rich, cheese-like mixture with the texture of a fresh ricotta cheese. Yes, that means you can use it to make a fantastic vegan lasagna or spinach artichoke dip. Or any other savory recipe that calls for fresh cheese.
Directions
Drain cashews, reserving 3/4 cup of the water. Add cashews and the 3/4 cup cashew water to a blender. Cover and blend 1 to 3 minutes or until smooth and thickened.
Add this cashew "cheese" to your favorite vegan recipe. We especially love it in our homemade Vegan Spinach and Artichoke Dip.
