1 tsp. grated lime peel | ||
⅓ c. Hy-Vee pineapple juice | ||
⅓ c. lime juice | ||
¼ c. Hy-Vee honey | ||
2 medium firm, ripe papayas, peeled, seeded, halved | ||
½ tsp. Hy-Vee ground cinnamon | ||
2 c. Hy-Vee fat-free vanilla yogurt, divided | ||
8 tsp. granola, divided |
Directions
- Preheat oven to 375 degrees.
- In an 11-by-7-inch baking pan, stir together butter, lime peel, pineapple juice, lime juice and honey.
- Place papaya halves cut-side-down in honey mixture. Sprinkle with cinnamon.
- Bake for 15 minutes or until sauce bubbles.
- In four serving bowls, place 1/2 cup yogurt. Top with papaya half and 1 tsp sauce. Sprinkle each papaya with 2 teaspoons granola.
