Black Bean Mango Quinoa Salad

1 tbsp. fresh lime juice | ||
2 c. cooked red quinoa (at room temperature or cold) | ||
1 mango, peeled, seeded and diced | ||
1 handful chopped cilantro | ||
1 (15 oz) can black beans | ||
1 red bell pepper, chopped | ||
6 green onions, thinly sliced |
Directions
- In a small bowl, combine vinegar, oil and lime juice.
- Combine remaining ingredients in a large bowl. Drizzle dressing over the salad, and toss until well combined. Chill for about an hour.
