Butternut squash makes everything better, and better for you. The beauty of this side is that it cooks in about 20 minutes.

2 c. chopped celery | ||
2 shallots, chopped | ||
1 butternut squash, peeled, seeded and cubed | ||
1 white onion, diced | ||
2 c. Hy-Vee chicken broth | ||
1 (16 oz) loaf Hy-Vee Bakery baguette, cubed and dried | ||
2 tbsp. chopped fresh sage | ||
1 tsp. kosher salt | ||
1 tsp. Hy-Vee black pepper | ||
½ tsp. crushed red pepper |

Directions
- Preheat oven to 350 degrees.
- In a large ovenproof skillet, melt butter over medium-high heat. Add celery, shallots, squash and onion; sauté for 3 minutes. Add broth and simmer for 2 minutes. Stir in bread, sage, salt, black pepper and red pepper.
- Bake for 15 minutes in skillet or in a casserole dish.
